Salmon Cakes

1 small can sockeye salmon

Salmon cakes

2 tbls almond flour

1 large egg

salt

hot chili powder (or not hot)

1/4 c cilantro

1 tbls refined coconut oil ( or olive oil)

Heat oil in a large pan.

Combine all ingredients… spoon 4 equal mounds of salmon mixture and lightly form into a patty right in the hot oil. Cook a few minutes on each side till browned nicely, not burned. Top with fresh cilantro, capers, lemon…. serve with a side salad, or any greens you like.

PS….. this recipe is adapted to my tastes. You can be creative, add any thing extra you like, for example 1/4 cup diced onion, red peppers, celery. Vera
